Slow Cooker Mexican Chicken
Slow Cookers can be a fantastic option for days that you are going to be short on time to cook dinner. With a little forethought and a good recipe on hand, a nutritious meal can be ready as you walk in the door for dinner. Here is a healthy slow cooker recipe shared with the us by Natalie Dileth, winner of the facebook "share your recipe" contest!
Slow Cooker Mexican Chicken
- 4 boneless skinless chicken breasts
- 1 cup black beans
- 1 cup corn kernels (fresh or frozen)
- 1 small jar salsa (your favorite)
- 1 TBSP cumin
- 1 TBSP chili powder
Add all ingredients to slow cooker. Mix and cook on low for 8-10 hours.
For a creamier version - add 1/2 cup 2% Greek yogurt in the last 30 min of cooking.
Serve with cooked brown rice or quinoa and a green salad.
